I've come to love big breakfasts. Every weekend (or most weekends), Donny and I like to make one big, hot breakfast. It's usually pancakes or waffles, but sometimes we'll have bacon and eggs, omelettes or even cornbread.
Gay Lea Foods has recently come out with a NEW Spreadable Butter that I had a chance to preview -- it's the newest on the shelf and combines two of my favourite breakfast flavours: cinnamon and brown sugar.
So, to celebrate this new butter, and my recent appointment as Brand Ambassador for Gay Lea Foods :), I decided to make a Challah French Toast Cassarole. Imagine your plain ol' French Toast, but made with a sweet, airy Challah bread and topped with this new butter and Canadian Maple Syrup. Oh yes, it's that good.

CHALLAH FRENCH TOAST CASSAROLE
You'll need:
- Challah Egg Loaf
- 6 large eggs
- 2 cups of milk
- cinnamon
- NEW GayLea Spreadable Cinnamon & Brown Sugar Butter
The night BEFORE you want to eat this, you need to do the prep. It's super easy and takes minutes, but needs to be done the night before.
- Cut the Challah into 1-inch pieces and set in a casserole dish
- In a mixing bowl, combine eggs and milk and whisk
- Pour over Challah and ensure everything is coated with the liquid
- Optional: sprinkle cinnamon on top
- Cover with aluminium foil and refrigerate overnight
The next morning, check on your Challah and make sure all the bread is wet. If it's not, give it a little stir. Preheat the oven to 350 degrees and bake for 30-35 minutes with the foil off. The inside should be moist, but not wet and the top should have a golden brown colour.
Time to serve! You need to eat this one hot and obviously be generous with your GayLea Spreadable Cinnamon and Brown Sugar Butter. I also topped mine with Maple Syrup.
It was delish! Be warned that this is a filling breakfast, but it makes great leftovers for the rest of the week!

ReplyDeleteEvery couple of weeks we do a big old English fry up like my dad used to do when I was a kid. Bacon, Sausage, Fried Eggs, Fried Mushroom, Fried Tomatoes with toast and lots of HP Sauce!
