Summer has officially arrived and what better way to kick off the season and summer solstice than with a beverage?! Whether you're entertaining friends or relaxing in your backyard this weekend, a light and bright cocktail is always a good idea.
I'm a fan of citrus and sour, sometimes, finding the right cocktail is a challenge for me -- they're often too sweet or too strong. I've come up with three easy-to-make, easy-to-drink cocktails that incorporate one of my favourite sour fruits -- grapefruit.
Grapefruit is a beautiful fruit because it is both sweet and sour at the same time. And with so many different types on the market, no two grapefruits are alike. For this recipe, I've used a Ruby Grapefruit. Note: if you can't have grapefruit for medical reasons, or you don't like it, feel free to substitute with lemon, and I'm sure these drinks will still be delicious.
Grapefruit Spritz
We love an Aperol Spritz, and this is similar. Mix Prosecco with freshly squeezed grapefruit juice (about 2 tbsps). If it's too tart, you can add some Sprite or soda. Garnish with a slice of grapefruit. This is perfectly light and perfectly sippable.
Grapefruit & Thyme Gin Tonic
If you're a fan of a classic gin and tonic, adding grapefruit gives this classic a bit of a punch. Muddle fresh thyme into your gin and tonic, then squeeze fresh grapefruit into the drink. Top it off with some grapefruit zest and a spring of thyme and you have a summer-ready favourite with a savoury twist.
Easy Peasy Grapefruit Squeezy
If you don't have any grapefruit at home but still want the grapefruit taste, using a carbonated grapefruit beverage will be your saving grace. Mix the beverage with a shot of tequila or vodka, shake over ice and serve.
