OK -- so maybe I should leave the poetry to Dickens, but the chords ring true. Hands up if you're going to a holiday this weekend or next week and double hands up if you offered to bring something!?
Sure, you can pick up a shrimp ring and call it a day, but that's no fun, is it!?
Luckily, Summer Fresh has an annual entertaining guide, and this year, there are 10 new and simple APPY recipes that will surely elevate your holiday entertaining. Now, these aren't typical Christmas bites -- but with options like Hummus and Burrata Crostini or Artichoke & Asiago Polenta Bites and Holiday Hummus Swirl, you'll want to try them all.
I opted to try the Fresh Hummus Spring Rolls -- they're light and require zero cooking or baking, plus I love the taste of fresh rolls.
The ingredients are pretty simple for this recipe: julienned carrots and cucumber, shredded red cabbage and lettuce. Cilantro is optional (but I recommend) and three Summer Fresh products: Avocado Hummus, Spicy Hummus and Pad Thai Salad. If you're still in the mood for that shrimp ring, grab one and remove the tails off the shrimp (optional). And of course, spring roll papers -- you can find these in the International aisle at the supermarket, and you can find Summer Fresh products in the refrigerated section of the grocery store.
To start, prep all your veggies and have them ready to go. You can do this in advance if you're short for time. Next, make the dipping sauce. Add one container of Summer Fresh Spicy Hummus and mix in 2 tbsp. of soy sauce and 2 tbsp. of honey, along with 1/4 cup of tahini for extra creaminess. Add to a dipping bowl.
Now let's roll: you need to assemble each roll individually. Soak a piece of rice paper in warm water for 20 seconds and carefully place it onto a clean surface. Spread a thin layer of avocado hummus on the wrapper, leaving a little border around the edges. Add your filling, just as you would a taco -- lettuce, cabbage, cilantro, a little forkful of pad thai and two shrimp.
Fold the sides of the wrapper in, and roll tight. Cut in half. Serve with the dipping sauce.
You can make these spring rolls in advance and keep cool until your guests arrive. They are naturally vegetarian and can be vegan with a couple adjustments. Plus, all Summer Fresh products are free of additives and preservatives and made locally -- so it's good food you can feel good about serving.
